Our Favourite FODMAP Friendly Canneloni Recipe
The warm heartiness of a delicious Italian meal needn't be missed while following a FODMAP diet
Today we're going to show you how low FODMAP Cannelloni can indeed be done, and you might even have some fun while it's being done!
The great thing about a cheesy, tomatoey, creamy cannelloni is that once you cook up a batch, you'll have some for at least a few days so you can take some for a lovely work lunch, heat and eat for dinner, and even pop into kids' lunchboxes.

Serves: 4; 3 cannelloni tubes per serve (this is a low FODMAP serve size, beyond this the serve the meal becomes high FODMAP for lactose).
Ingredients
1 jar Simply Wize Napolitana Pasta Sauce (no garlic, no onion)
250g lactose free ricotta, or make your own using Fussy Fodmapper's delicious low FODMAP ricotta recipe.
1/4 cup (20g) grated parmesan
1/2 cup shredded cheese (mozzarella for extra stringiness!)
250g frozen spinach, chopped, thawed
2 tbl fresh basil, chopped
2 tbl flat-leaf parsley, chopped
Salt & pepper
Method
Preheat oven to 190°C. Lightly grease a 20cm x 28cm x 4cm-high ovenproof dish.Pour in half the bottle of Simply Wize Napolitana Pasta Sauce, spreading evenly over the base of the dish.
Place the ricotta, parmesan, spinach, parsley, basil, salt and pepper in a large bowl. Mix to combine.
Spoon ricotta mixture into each cannelloni tube until completely filled at both ends.
Lay tubes side by side in the dish, and pour our the second half of the napolitana sauce to coat the tubes. Sprinkle the top of the dish with mozzarella.

Serve with low FODMAP side salad.
