If you're looking for an easy peasy party pleaser, or you're in the mood to bake a nice allergen friendly cake for a delicious family treat, look no further than our Well & Good inspired Carrot Cake recipe.

Well & Good All Purpose Cake Mix is free from: gluten, wheat, soy, dairy, tree nuts and peanuts, so you can feel confident it's a treat that everybody can enjoy 💕

This cake mix let’s you become creative and the possibilities are endless. Our carrot cake recipe is super easy – simply toss in the mix and add in your extras. 

Here is our recipe:

Serves: 8

In our version, we have added some carrot & cinnamon in the baking mix for a bit of spice. 

Cake

x 1 pk Well & Good All Purpose Cake Mix 

x 3 medium eggs

1/2 cup water

1/2 cup canola oil 

1 cup grated carrot

1 tsp cinnamon 

Icing Mix

200gm lactose free cream cheese 

125gm icing sugar

70gm butter or margarine

1 tbl combination carrots & walnuts to garnish

Our icing was made with butter, lactose free cream cheese & icing sugar, with a sprinkle of walnuts & shredded carrot on top for presentation. You could also add a sprinkling of almonds (up to 30g or 1/4 cup), chopped brazil nuts or macadamias, and sprinkle some cinnamon on top for presentation.

Serving size information

Grated carrot: Low FODMAP up to 75g (1 medium carrot)

Cinnamon: Low FODMAP up to 1 tsp (2g)

Cream cheese: Low FODMAP at any serve as it is lactose free

Icing sugar: Low FODMAP per 16g serve

Serve sizes are based on Monash University or FODMAP Friendly Food Program tested serve sizes.
