Mexican Monday Made Quick, Easy & Low FODMAP

For our Mexican Monday, we've taken some low FODMAP Indian inspiration, with butter chicken marinated fajita-style wraps! 

If you're looking for an easy bite to eat that is low FODMAP, simple to prepare, and also a healthy alternative to calorie-dense takeaway chicken wraps, read on to find our super quick low FODMAP Mexican-style chicken wrap recipe.

Ingredients:

4 x Natureen FODMAP Friendly Buckwheat wraps 

1 x Fodmapped for you! Butter Chicken Curry Sauce

1 tbl olive oil

500g lean chicken breast, cut into strips

1 cup iceberg lettuce

1 cup mozzarella cheese

2 x small tomatoes, regular

1 x lebanese cucumber

1 x half red capsicum

1 x half yellow capsicum 

1 x tsp chilli flakes

1 x serve (4-5 tbl) low FODMAP Mexican Salsa

Method:

Add oil to pan and cook the chicken on low heat until just brown.

Add Fodmapped Butter Chicken Curry Simmer Sauce. Allow chicken to cook in simmer sauce for 10 minutes, stirring occasionally. Add chilli flakes.

Remove chicken from heat, allow to rest for 5-10 mins. Use tongs to assemble chicken in the middle of each wrap. Add mozzarella, iceberg lettuce, tomato, cucumber, and capsicum*. Add salt & pepper to taste.

*You may also like to roast the capsicum, to give your wrap a sweet and smokey flavour.

You can use any leftover chicken pieces in a warm chicken salad for lunch, add it to a low FODMAP sandwich on gluten free bread, or try adding it to spuds with home made low FODMAP salsa on top. Simply delicious every time.

Mozzarella cheese - Low FODMAP up to 1/4 cup (40g per serve)

Tomato - Low FODMAP up to one 119g small tomato

Lebanese cucumber - Low FODMAP up to 1/2 cup (75g)

Red capsicum - Low FODMAP up to 75g

Yellow capsicum - Untested, use small amounts and increase as tolerated

Chilli flakes - Low FODMAP up to 28g

Low FODMAP Mexican Salsa - Low FODMAP at 5 tbl or 60g.
