Is it Mexican night? Anyone else craving quesadillas? Here’s an easy recipe featuring La Tortilleria soft taco tortillas!😆

🌮 Low FODMAP Beef Quesadillas
Serves: 2
Prep time: 10 mins | Cook time: 15 mins

Ingredients:

-4 La Tortillería corn tortillas

-150g lean beef mince


-1 tsp garlic-infused olive oil

-
1 tbsp low FODMAP mild salsa


-1 tsp low FODMAP taco seasoning

-Salt & pepper to taste


-½ cup shredded lactose-free cheese


-¼ cup chopped lettuce

🥄 Optional toppings:
• Lactose-free sour cream
• Chopped coriander
• Lime wedges

🔥 Instructions:
1. Cook the beef filling: Heat garlic-infused olive oil in a pan over medium heat. Add beef mince and cook until browned. Season with salt and pepper. Cook for another 5–7 minutes until the mixture is fragrant and well combined. Set aside.

2. Assemble and toast the quesadillas: Place one tortilla in a non-stick skillet over medium heat. On one half of the tortilla, layer beef mixture, cheese, and chopped lettuce. Fold the other half over to form a half-moon. Cook for 2–3 minutes on each side, or until golden brown and cheese has melted. Repeat with the remaining tortillas and filling.

3. Serve:
Serve warm with your favourite low FODMAP toppings/ sauces.
