Low FODMAP Orange Marmalade Chicken & Rice

Ingredients
• 1 bone-in chicken thigh (skin-on)
• 2 tbsp orange marmalade
• 1½ tsp maple syrup
• 2 tsp white wine (or water)
• ½ tsp Low FODMAP Chicken Stock Powder
• A pinch of Low FODMAP Garlic Replacer
• 1 tbsp olive oil
• 3 cherry tomatoes, halved
• ½ sprig fresh rosemary
• Salt & black pepper, to taste
Directions
1. Prep
- Pat the chicken dry with paper towels.
- Season lightly with salt and black pepper.
2. Mix the Sauce
In a small bowl, mix together orange marmalade, maple syrup, white wine (or water) and chicken stock powder.
3. Cook the Chicken
- Heat olive oil in a pan over medium heat.
- Place the chicken skin-side down.
- Cover with a lid and cook for until the skin becomes golden and crispy.
- Flip the chicken, cover again, and cook. making sure it’s fully cooked through — the juices should run clear.
4. Add the Sauce & Vegetables
- Add the prepared sauce directly into the pan.
- Add a pinch of Low FODMAP garlic powder and gently stir.
- Add cherry tomatoes and simmer for 3–4 minutes until softened.

Add rosemary and cook for 1 minute.
5. Serve
- Place the chicken skin-side up on a plate.
- Spoon the sauce and tomatoes over the top.
- Garnish with a small sprig of rosemary for a festive look. 🌿🎄
